Strawberry Poppy Seed Vinaigrette
Ingredients:
1 ½ cups sugar
⅔ cups apple cider vinegar
1 tsp salt
2 TBS dry mustard
1 cup oil
1-2 TBS poppy seeds
1 cup strawberry juice
(the juice you have left from the frozen strawberries that you used to make the strawberry bread is perfect for this!)
Directions:
Mix sugar and vinegar, then add the rest of the ingredients. Blend well and let sit overnight. IF you don’t have strawberry juice, take about 10 fresh strawberries, slice thinly and add ¼ cup sugar, cover, place in refrigerator and wait until juice appears. Add the juice to the dressing, and the strawberries to your salad.
