Strawberry Bread
Ingredients:
3 cups plain flour
1 Tablespoon cinnamon
1 teaspoon salt
1 ¼ cup oil
2 cups sugar
1 teaspoon baking soda
3 eggs, beaten
2 10oz packages frozen strawberries
DIrections:
Preheat oven to 350*. Grease 2 loaf pans. In a large bowl mix flour, sugar, cinnamon, baking soda, and salt. Make a well in the center, pour eggs and oil into the well. Stir until just moistened. With a slotted spoon, dip strawberries from juice and stir gently into mixture. Add juice gradually until batter is of the proper consistency. Fill loaf pans ¾ of the way. DO NOT OVERFILL. Bake for 1 hour, or until tested done. Let cool at least 15 minutes in the pan before removing. It makes 2 large loaves or 3 medium sized. BUT do not overfill (a word from experience! :)
