Carrot Cake
This recipe was from a good friend who is no longer with us. I hate the diseases that take people away from us way too soon.
Ingredients:
4 eggs
2 cups sugar
2 cups sifted flour: it makes a difference
2 teaspoons cinnamon
2 teaspoons baking powder
4 cups ground carrots
¾ cup pecans
1 ⅓ cup oil
Directions:
After eggs and sugar are well mixed, combine half of the flour, cinnamon and baking powder in another bowl, mix well. Add ½ of the oil to that mixture. Mix well. Add egg and sugar mixture, remaining oil, flour cinnamon, baking powder, carrots, and pecans. Bake at 350° for 45 minutes.
