EGG PANCAKES —“Eier Pfannkuchen”
These are great for a lazy, late Sunday morning brunch!
Ingredients
1 cup milk
1 cup all-purpose flour
1/4 cup granulated sugar
2 eggs
pinch of salt
powdered sugar (optional)
Instructions
Mix flour, granulated sugar and salt in a large bowl. Whisk eggs and milk in a separate bowl and then add to dry ingredients, mixing all together. Spray a small nonstick pan with a nonstick spray such as Pam or add a little pat of butter and place over medium heat. Add approximately 1/4 cup batter to a small skillet and let it coat the bottom with a thin layer. Once batter begins to bubble, flip and finish cooking on other side.
Once egg pancakes are done, add your favorite filling such as jams, jellies, or fruit. Then roll the pancake into a tube. My favorite filling is softened cream cheese spread on the pancake with macerated strawberries. Dust with powdered sugar for an extra treat!
Macerated Strawberries:
Wash, cap, and thinly slice a pint of strawberries. Add 1/4 cup sugar and mix. Let sit for about 15 minutes. Stir again and enjoy!
