Green Acres Family Recipe: Pumpkin Bread

Pumpkins are the cornerstone of fall time. From pumpkin flavors, seasonings, and spices, to pumpkin carving, or decorating with pumpkins the folklore surrounding fall’s favorite fruit is alive and well.

In our September/ October issue of Cypress Magazine this year we featured Green Acres Pumpkin Patch and Corn Maze. Denton, the owner really knows his pumpkin stuff!

Being an expert in the pumpkin patch it goes without saying that he’s also an expert as it relates to great pumpkin recipes! Below is Denton’s Family recipe for pumpkin bread. Try it out, and let us know what you think! Happy fall!

Pumpkin Bread

Ingredients:

2 1/3 cups plain flour

2 1/2 cups sugar

2 teaspoons baking soda

1 teaspoon cinnamon

1 teaspoon nutmeg

1 teaspoon salt

2 cups pumpkin

4 eggs

1 cup crisco oil

1/2 cup water

1 teaspoon vanilla

1 cup chopped pecans

Directions:

Mix flour, sugar, baking soda, cinnamon, nutmeg, and salt. Make a well in the mixture, and add pumpkin, eggs, oil, and water. Mix until smooth. Add nuts and vanilla. Bake in any size pans at 350 degrees until a toothpick comes out clean.

Place the Fairytale pumpkin whole in the oven at 375 degrees until soft to touch, like a potato. Slice open, clean seeds out, scoop the pumpkin out, and blend until smooth. Freeze 2 cups in freezer ziplock for baking needs all year long. Pour yourself a glass of milk, and enjoy!
