International Watermelon Day

To celebrate International Watermelon Day we’ve picked out some cool recipes for you to make for celebrating this amazing melon as well as the end of summer!

Watermelon-Mint Paletas

Ingredients:

½ cup water

½ cup white sugar

4 cups cubed, seeded Watermelon

1 teaspoon chopped fresh Mint

1 Lime, juiced

¼ teaspoon Salt

A pinch of Chili powder

Directions:

Mix water and sugar in a small saucepan. Bring to a boil, stirring to dissolve sugar. When sugar is dissolved remove from heat and let cool. Blend sugar syrup, watermelon, mint, lime juice, chile powder, and salt in a blender until liquefied. Pour the mixture into 10 ice pop molds Freeze Paletas for 2 hours and insert wooden sticks/handles into the molds; return to freezer until solid, 12 to 24 hours.

If desired you could add a ½ cup liquor to add a boozy surprise to your pops.

Watermelon Lemonade

Ingredients

6 Cups Cubed Seedless Watermelon

4 Cups Cold Water

¾ Cup Fresh Lemon Juice

⅔ Cup Granulated Sugar

Ice and Fresh Mint

Directions

Puree Watermelon in a blender, then strain into a bowl. Mix water, lemon juice, and sugar in a large pitcher until the sugar is dissolved. Stir in the watermelon puree. Add ice and mint to the pitcher and chill before serving

Watermelon Daiquiris

Ingredients:

4 Cups Cubed Frozen Watermelon

The Juice of 1 Lime

½ Cup Dark Rum or Vodka

Chopped Mint Leaves to Taste

Granulated Sugar to Taste

Directions:

Add everything to the blender and puree. Pour into glasses and enjoy!

To let the kids enjoy these leave out the alcohol to have Virgin Daiquiris
