Cheese Asparagus Soufflé
Ingredients:
3 Tablespoons butter
4 Tablespoons flour
1 ½ cups milk
¼ teaspoon dry mustard
¼ teaspoon celery salt
1 teaspoon chopped parsley
1 teaspoon chopped onion
4 egg yolks
1 cup grated cheddar cheese
2 cups asparagus
4 egg whites, beaten stiff
1 teaspoon paprika
Directions:
Melt butter, add flour, and pour in milk. Cook slowly, stirring constantly until a thick, creamy sauce forms. Add seasonings, yolk, and cheese. Cook over low heat for 2 minutes. Remove and fold in remaining ingredients. Bake at 350℉ for 30 - 35 minutes.
