Mai Tai Pie

Ingredients:

2 cups flaked coconut

1 (8 oz) package cream cheese

¼ cup melted butter

1 (14 oz) can sweetened condensed milk

1 (6 oz) can sweetened orange juice concentrate, thawed

⅓ cup light rum

Orange slices (small can of mandarin oranges makes a prettier pie, we used regular orange slices, but literally scrubbed it - gently!!)

2 Tablespoons orange flavored liquor

1-4 ½ oz container frozen whipped topping, thawed

Directions:

Combine coconut and butter, mix well. Press in a 9-inch pie pan and bake at 300 degrees for 25 minutes. Cool well. 

Beat cheese until fluffy. Add milk and orange concentrate, beat until smooth. Add rum and liqueur. Pour into cooled crust. Refrigerate for at least six hours. Place orange slices on top.
