Loaded Camp Potatoes
Ingredients
2-4 potatoes ( sliced or diced)
¼ stick of butter
Olive oil
Your favorite cheeses
Sour cream
Chives
Bacon Bits
Salt
Pepper
1-2 purple onions
Foil
Directions
Dice or slice your potatoes (whatever way is your favorite)
Slice your onions
Place your onions and potatoes in a bowl and coat with olive oil, add seasonings and cheese to taste
Cut foil into squares to wrap around potatoes and onions to make a pouch ( we double wrapped ours)
Coat foil with olive oil to keep the mixture from sticking
Place mixture in the pouch and place a couple of slices of butter in the pouch
Wrap your pouch and place onto coals
Leave on the fire for 15-20 minutes
Remove from the fire and let the pouches cool
After cooling, we placed the mixture in a cast iron skillet and topped with cheese, bacon bits, sour cream, and chives
