Strawberry Salsa (Topping for Salmon)

Ingredients:

1 pound fresh strawberries, diced (I used 1 ½ - 2 quarts)

½ cup sugar

1 jalapeno, seed, deveined, and finely diced

½ cup loosely packed cilantro leaves, chopped

⅓ cup red onion, diced (large dice slices)

Juice of a lime - or ⅓ cup lime juice

1 teaspoon Kosher salt and black pepper to taste


Directions:

Prepare strawberries in a separate bowl, with sugar, set aside in the refrigerator.

In a large bowl combine remaining ingredients for the salsa and stir together until combined. Leave in refrigerator overnight, then add strawberries and juice to salsa right before you prepare your salmon.


Grilled Salmon:

-Preheat grill to medium high heat

-Season the salmon fillets with salt and pepper

-Oil the grill grates or spray them with cooking spray, then place the salmon fillets on and grill each side for approximately 3-4 minutes or until the desired degrees of doneness is reached.

-Top the salmon with the strawberry salsa
