The Cypress Cheesecake

Cypress Cheesecake

Ingredients:

4 eggs, beaten

1 carton (1lb) creamed cottage cheese

1 package 8 oz cream  cheese

1 scant cup sugar

1 Tablespoon lemon juice

1 teaspoon vanilla

Vanilla wafer crumbs

1 carton sour cream

2 tablespoons sugar

Lump (3 Tablespoons) of butter


Directions:

Place first 6 ingredients into a blender; mix well.  Line 8-inch square pan or use a cheesecake pan with crumbs; sprinkle sugar and melted butter over crumbs.  Put into 350-degree oven for about 10 minutes, until golden. Pour in filling and bake 40 minutes at 350 degrees.  Remove and top with sour cream blended with 2 Tablespoons sugar. Return to oven and bake 10 minutes longer. Chill before serving.
