Cheesy Potato Soup

Cheesy Potato Soup

Ingredients:

1 bag of Yukon Gold potatoes, peeled

1 block of Velveeta cheese

1 pinch flour

¼ cup sour cream (optional)

4-6 stips of bacon, fried and chopped (optional)

salt and pepper

Directions:

Cut the peeled potatoes into medium sized cubes and place them in a large pot. Then add salt and pepper and fill with water until it just covers the potatoes. Boil until potatoes are tender. While that is boiling, fry and chop the bacon and cube the block of Velveeta cheese to make melting easier. Once the potatoes are done, do not drain and keep on medium heat. Add in the cubes of cheese a few at a time, stirring occasionally. Once the cheese has fully melted, add in the pinch of flour and stir. Finally, add in sour cream and bacon if you’d like.
