Broccoli-Corn Casserole

Ingredients:

1 ½ pint cream style corn (Home frozen works best)

1 16-ounce package frozen broccoli

1 egg, beaten

1 tablespoon onion, finely chopped

½ teaspoon salt

½ teaspoon black pepper

1 ¼ cups cracker crumbs (ritz crackers)

7 tablespoons melted butter

Directions:

Thaw corn and broccoli.  Mix cracker crumbs and butter, divide the mixture in half.  Reserve ½ for topping. Thoroughly mix vegetables, onion, egg, salt, pepper, and half the cracker-butter mixture.  Pour into buttered 1/12 quart casserole. Sprinkle remaining cracker-butter mixture over the top. Bake uncovered at 350 degrees for 35-40 minutes or until well heated.  

We made this as is and it was really good, but the talk around the table as we sampled was that it could have had some cheese mixed in for a different taste.
