Spinach Supreme

Ingredients:

2 packages frozen spinach

2 cloves garlic or 1 teaspoon garlic powder

6 slices bacon

6 tablespoons olive oil

6 tablespoons parmesan cheese

4 eggs, beaten

¾ cup sour cream

Salt & pepper to taste

Directions:

Cook spinach and drain.  Sauté bacon until crisp; drain and crumble.  In a separate skillet, heat olive oil; add garlic and cook until garlic is golden brown.  Add spinach, two tablespoons (2 pinches) of parmesan and cook over medium-low heat until very hot.  Pour in eggs and stir well until the eggs are cooked. Place spinach in the casserole, sprinkle with 4 tablespoons of parmesan; spread sour cream over top, then top with bacon crumbles.  Place in a 350-degree oven for about 10 minutes.
