Bourbon Sweet Potatoes

Ingredients:

5 medium sweet potatoes

1/4 cup butter

2 eggs

1 teaspoon vanilla

½ teaspoon cinnamon

1 ½ ounce bourbon whiskey 

Directions:

Bake sweet potatoes until tender.  Peel and beat with an electric mixer.  Add butter, eggs, vanilla, cinnamon, and whiskey.  Mix well and place in a greased casserole.

Topping:

Ingredients:

¼ cup melted butter

3 tablespoons flour

¾ cup brown sugar

½ cup pecans

Directions:

Mix ingredients.  Sprinkle over potatoes and bake at 350 degrees for 30 minutes.
