Pork Loin

To go along with the rolls, we created this one in our kitchen.

Ingredients:

2 pork loins, smaller size

dash of celery salt on each pork loin

½ teaspoon crushed red pepper on each pork loin

The Stuff (from Erwin’s Restaurant) - about 3 shakes per loin.

2 cups of applesauce (Tart variety works best!)

3 tablespoons cherry jelly

1 bag of fresh cranberries

1 oven bag

Directions:

Rinse your pork thoroughly and place in the bottom of the bag. (We put ours in a baking dish with sides). Add your seasonings, then split a cup of the Applesauce between the top of each loin. Add the cherry jelly, fresh cranberries and the rest of the applesauce. Tie the bag and bake at 400* for 15 minutes, reduce heat to 325* and cook for another 12 minutes. Remove from the oven. The temperature of the meat should be 165* with a meat thermometer, if you use one. Let the meat rest inside the bag with the juice for about 5-10 minutes, remove, slice, and conserve some of the juice with the cranberries for a sauce. You don’t have to add anything, the spices and juice do it for you!
