Sweet Potatoes in Orange Cups

Ingredients:

3 large oranges

2 ½ cups mashed sweet potatoes

½ cup cream

1 tablespoon brown sugar

pinch of salt

6 marshmallows

Directions:

Cut oranges in half; remove pulp; discard white membrane; cut pulp in small pieces.  Beat the cream, salt and brown sugar into the potatoes; add orange pulp. Fill the orange cups and place a marshmallow on each; bake 350* for 20 minutes.
