Frozen Fruit Salad

Ingredients:

1 envelope unflavored gelatin

¼ cup maraschino cherry juice

1 cup diced apricots

1 cup diced pineapple

1 cup seedless grapes

1 cup chopped maraschino cherries

3 Tablespoons lemon juice

½ cup of sugar

1 cup of heavy cream

½ cup mayonnaise or salad dressing

Directions:

Soften gelatin in cherry juice in top of double boiler, then dissolve over boiling water. Add fruits, lemon juice, and sugar. Chill until syrupy. Whip cream until light and fluffy. Stir in mayonnaise. Fold into fruit mixture with a wooden spoon, using an over-under motion. Spoon salad into molds with air-tight lids and freeze until salad is set. Store in freezer.
